Chicken Zorba
Serves - 4
Ingredients
- juice of 2 limes
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon tumeric
- pinch of salt
- 1 tablespoon finely chopped mint
- 4 boneless skinless chicken breasts
- 150g greek style natural yogurt
- 170g tub hummus
- 2 tablespoons olive oil
- 4 white pitta breads
- mixed salad leaves
- sliced tomato
- yellow pepper
Instructions
- In a bowl blend together lime juice, coriander, cumin, tumeric, salt and mint
- Cut chicken into small strips
- Add chicken and marinade for at least 30 mins in fridge
- Mix yogurt and humous and chill until needed
- Heat oil in pan and fry chicken for 8-10mins
- Toast pitta
- Cut pitta in half and fill with above
